Habtamu Fekadu Aga took over this washing station in 2020, and in 2022 added a Penagos pulper to build cleaner, more consistent lots. The care is methodical: cherries are held with about ten percent mucilage, fermented for 24 hours, handwashed, then dried on raised beds out of direct sun for 9 to 12 days, turned and inspected every few hours by two dedicated quality-control managers who track moisture and pull defects at each pass. That attention lands in the cup as something silky and aromatic: lavender and jasmine up top, anise threading through, and ripe plum on the close.
