Henry Oliver Cerón Viveros farms Los Eucaliptos in the village of Madroñero, high in San Lorenzo, Nariño, where his family has grown coffee since 1940. He represents the new generation on the finca, working alongside his father and mother and bringing fresh ideas to a place with deep roots. This Castillo lot is hand picked at peak ripeness, fermented in sealed containers for 30 hours, then washed and dried slowly in parabolic dryers over about 13 days. The care shows in a cup that's layered and soft: cedar, fresh fig, donut peach, and a finish like fresh cream.
